In production, we distinguish wheat predough from wheat sour dough...

Wheat predough is prepared by the fermentation process of flour and water, which is started with bakery yeast.
Wheat sour dough is prepared with the help of the appropriate starter StartGut® culture which contains a defined group of micro-organisms responsible for the sensory and biochemical properties of a particular type of sour dough.

Fermentors can be flexibly used for all wheat predoughs with a flour:water-ratio ≤ 100:100. Special agitator for quick lump-free stirring, ensures that gluten strands are preserved.

Intuitive, simple control for observing fermentation times and checking dosage quantities.

  • Compact model W 200: cover can be used as a table, 890x930mm of working space

  • Material: rost frei 1.4301 for all parts which come into contact with the dough

  • Pump (motor 0,37kW for model W200 & 0,75 kW other models), including a 3m hose and drain hose (180° curve)
